Facebook land is pretty awesome. It allows me to do my job as an online health and fitness coach which is super cool, and portable. I’m so fortunate that it goes with me when we move. More than that, I’m thankful for the friendships I have both created and rekindled over the years since I have been on the social media site.

Last year I was at an event in our hometown and I was chatting with the brother of an old high school friend, Erin (Moberg) O’Rourke. He told me Erin was a fitness instructor and that we would have a lot in common. Lo and behold one day not long after that her profile popped up on Facebook and I was so happy to see her and reconnect. She started posting healthy recipes and I was excited to try them and to share them with my friends and clients.  Erin is always tinkering with recipes and toying with the idea of assembling them in a cookbook. Trust me when I say that I have had some fantastic meals courtesy of Erin’s shares.

Now you are all in for a treat too because Erin has offered to be a regular contributor to my TUESDAY FOOD DAY post.

First, some background. Erin met her husband Michael not long after high school and they will be celebrating their 25th wedding anniversary in June. Woohoo!

 

Together they have three kids – Taylor 22, Max 20, and Sydney 16. Shortly after Sydney was born and Erin was outnumbered by children and could no longer simply throw them in a stroller to get in a run or a walk, she started teaching cycle classes at a small gym in Rocklin.

Soon after she joined a larger gym, California Family Fitness, and she broadened her teaching skills. Erin said this was the perfect fit for her to still be home with her kids and stay healthy for her family. Now, 16 years later, she teaches 23 classes/training sessions including:

Gravity (according to Erin it’s like Chuck Norris’ machine on steroids); Cycle (follow her playlist on Spotify at Moberg 46), and a Pilates/Yoga combo called Piloga (not to be confused with Beachbody’s Pilates/Yoga combo called Piyo – LOL).

Erin’s passion is working with people who are ready to take their fitness to the next level. She also loves coming up with new recipes that allow families to become healthier, without killing their budget. Erin and I agree that whereas everyone out there is trying to say “you have to be organic, vegetarian, gluten free, etc. to be healthy,” it’s not true. You need to move more and eat healthier.

Erin is a real person, living a real life, eating real food and doing real exercise. She’s married to her best friend and says her family of five is more important to her than anything else. Like me, Erin believes everyone should live his or her life to their full potential.

This week Erin is sharing one of her family’s favorites: Protein Pancakes. They are easy to make and the batter will last for a couple of days.

Protein Pancakes – Crazy full of Protein!

1 cup Oatmeal

1 cup Cottage Cheese (low fat)

4 eggs

1 tsp vanilla

1 tsp cinnamon

1 tsp sugar (optional)

Blend oatmeal until it looks like flour.  Add eggs, vanilla, sugar, cinnamon, cottage cheese.  Blend until liquid. Heat Teflon pan to medium heat.  Pour 1/3 cup batter and cook 90 seconds each side or until brown.  If you use a Teflon pan, no need to use oil.  If you cook them individually, save the batter through the week.

Top with peanut butter, jelly, honey, yogurt, bananas, berries… your choice! Erin’s favorite, filling breakfast is two pancakes with peanut butter and honey!
